Grain-Free Ultimate Banana Bread

3/4 cup almond butter
1/2 cup coconut flour
2-3 very ripe bananas (about 1 and 1/2 cups)
1/2 cup walnuts, chopped (optional)
1 1/2 tablespoons lemon juice
1 teaspoon vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon sea salt
- Preheat oven to 350 degrees.
- Mix all the ingredients together in a large bowl with a hand mixer, then pour in a greased or parchment paper lined loaf pan.
- Bake for 40 minutes until the top is golden brown and a knife or toothpick comes clean when the middle is tested. Enjoy!
